Cerami & Associates was asked to provide acoustical and audiovisual consulting services for Charlie Trotter’s located in The Palazzo Resort Hotel Casino in Las Vegas, Nevada, a restaurant that combines traditional architecture with elegant and modern innovations.

Our acoustical team set out by establishing baseline background noise level criteria and then made recommendations for the mechanical and kitchen equipment, much of which was located adjacent to the main dining room. We also examined the operable wall that divides the private and main dining areas, which retracts into the ceiling. Finally we made recommendations for customized solutions for surface finishes that enable the most comfortable acoustical environment.

For the sound system our audiovisual designers specified seven speaker zones for music and optional paging. In the kitchen our design included a wall mounted TV camera with pan/tilt/zoom control and preset functions placed to cover the cook line and plating areas. A 17” touch panel control with video window is located at the Chef’s table which is suspended above the kitchen for easy communication between kitchen staff.
